Fried Chicken Burger
The ultimate chicken burger for that fakeaway taste!
Serves 2
Cooking Time - 35mins + 2 hours for chicken to tenderise
Ingredients
2 Chicken Thighs
150ml Buttermilk
50g Flour
2 Tbsp Curry Powder
2 Brioche Buns
Lettuce
1 Tbsp of Sriracha Mayo (or try burger sauce alternatively)
Vegetable Oil for frying
Slaw
500g of cabbage (red, white or a mix) thinly sliced
1 spring onion, thinly sliced
1 Tbsp Mayo
Recipe Method
Place chicken thighs into a bowl with buttermilk, cover and chill for approx 2 hours.
Mix the flour and curry powder on a large plate. Remove the chicken pieces from the buttermilk, shake off any excess and dredge in the seasoned flour.
Half-fill a large saucepan with oil and place over medium heat until it reaches 180°C on a deep-frying thermometer. Alternatively, you can use a deep fat fryer.
Cook the chicken, in batches, for 4-5 minutes turning half way, until deep golden brown.
Drain on kitchen paper and keep warm while you fry the rest.
Place the cabbage, spring onion and mayonnaise into a large bowl and mix to combine. Season with salt and pepper.
Divide the slaw between the base of the bun halves and top with the cooked chicken and some lettuce. Spread the remaining bun halves with some spicy sriracha mayo and sandwich on top of the chicken.
