The Smith Family Roast Chicken
Our mother Bernie’s recipe has been handed down through our family and we think it’s the best!
Serves 4-6

Ingredients
1 Farmers to Market whole chicken
3 tablespoons olive oil
3 medium onions, sliced
Mixed herbs
For the stuffing
4 ounces breadcrumbs
1 medium onion, chopped
2 tablespoons butter
3 tablespoons chicken stock
Salt and white pepper to taste
Recipe Method
Pre-heat oven to 180ºC / 350°F
Wipe the bird inside and out, and remove any lumps of fat from the inside.
Line a roasting tray with sliced onions, herbs and a drizzle of oil.
For the stuffing: Mix together the breadcrumbs, chopped onion, butter, chicken stock, and some white pepper then stuff the cavity of the chicken with this mixture. Place the raw stuffed chicken in the roasting tray and drizzle some olive oil and mixed herbs over the chicken.
Weigh the stuffed chicken before cooking to calculate the correct cooking time (20 mins per lb / 454g plus 20 mins extra). Cover and roast the chicken for the time calculated (depending on the weight of the stuffed bird).
Once the chicken is fully cooked (when the juices at the thickest point run clear), allow to stand for ten minutes before carving.
Serve with roast potatoes and your favourite veg.
