Roast Spatchcock Chicken

Crispy, succulent chicken is guaranteed with this simple preparation method

Ingredients

  • 1 Farmers to Market Whole Chicken

  • 4 Garlic Bulbs Halved horizontally

  • 3 Lemons, sliced into 2cm slices

  • Sea Salt & Black Pepper

  • 2 Tbsp Extra Virgin Olive Oil

Recipe Method

  1. Preheat oven to 200°C

  2. Place chicken on a worktop or chopping board, breast-side down, with the legs towards you. Using a sharp knife or poultry shears, cut along each side of the backbone and remove it (discard or save for stock) cutting through the rib bones as you go.

  3. Open the chicken out and turn over. Using the heel of your hand, press firmly against the breastbone until it cracks, flatten the chicken so that the meat is all one thickness.

  4. Place the chicken on a lined baking tray and pat down the surface with kitchen paper to remove any moisture. Place lemon slices and garlic bulbs all around chicken and some underneath. Drizzle with oil and sprinkle with salt and pepper, massage into chicken to ensure a nice crispy skin.

  5. Roast in the oven for about 40mins or until the cooked through.
