Wipe the bird inside and out, and remove any lumps of fat from the inside. Sprinkle inside and out with a bit of salt. Mix together the breadcrumbs, chopped onion, butter, chicken stock, and some white pepper then stuff the bird with this mixture and secure well with small skewers. Drizzle some olive oil and mixed herbs over the chicken. Weigh the stuffed chicken before cooking to calculate the correct cook time (20 mins per lb / 454g plus 20 mins extra). Cover and bake the chicken in a pre-heated oven 180ºC / 350°F for the time calculated (depending on the weight of the stuffed bird). Once the chicken is fully cooked (if the juices at the thickest point run clear) allow to stand for ten minutes before carving. Serve with roast potatoes, green beans and carrots. Enjoy!!
